Monday’s lunches consist of some of the leftover Chinese takeout we got over the weekend, the last of my stir-fried spicy mushrooms, and some of the gimbap I made.
The beef lo mein at our favorite Chinese takeout place is so delicious it’s shaping up to be a regular in our cheat meal weekly rotation. I have some Chinese cabbage in the fridge, and I ended chopping some up to add to the lo mein.
To make our lunches more protein-rich, I added a hard-boiled egg into our bento.
I also sprinkled some toasted sesame seeds onto the gimbap.
